Who says pizza can't be both healthy and balanced? In Ayurveda, food isn't just about satisfying hunger – it's about nourishing the body, senses, and mind all at once. This Ayurvedic pizza is a beautiful example of that.

Here, you get that familiar pizza feeling – a crispy crust, rich flavor, and plenty of colors – but with ingredients that support digestion and energize the body. The crust is made from walnuts, sunflower seeds, and zucchini, resulting in a light yet satisfying dish that feels as good as it tastes.

This is the kind of food you'll want to share. Perfect for an evening with friends where you want to eat something delicious, sensual, and calming afterward – or for those days when you need to treat yourself to a meal that brings a little extra well-being into the kitchen.

A Crust with Nourishment and Energy

Instead of the classic wheat crust, I use a base of walnuts and sunflower seeds, blended into a coarse flour and mixed with grated zucchini. This combination provides substance, texture, and a lovely nutty flavor, while also giving the body healthy fatty acids, minerals, and protein.

The zucchini adds moisture and lightness, preventing the crust from becoming heavy and giving it a mild freshness. Dried oregano adds a Mediterranean and warm scent, and olive oil binds it all together.

It's such a delightful process to make – you can feel how the ingredients live, smell, and work together. There's something meditative about shaping the crust with your hands and watching it slowly come to life.

Crust Ingredients

  • 2 dl walnuts

  • 2 dl sunflower seeds

  • 2 dl zucchini (grated)

  • 3 tbsp. olive oil

  • 1 tsp. salt

  • 1 tsp. dried oregano

Instructions

  1. Blend walnuts and sunflower seeds into a coarse flour.

  2. Add zucchini, olive oil, salt, and oregano, and mix well.

  3. Spread the dough on baking paper and form it into a round crust.

  4. Dry the crust in the oven or a dehydrator at low heat for about 5–6 hours, until firm but still soft in the center.

  5. Top with your favorite ingredients – we recommend tomato, avocado, and fresh herbs for a light, colorful, and fresh balance.

Create Your Own Balance

The beauty of this pizza is that you can adapt it to your own dosha or to the season.

  • For Vata, you can add a little sweetness – e.g., roasted root vegetables, a little ghee, or a mild tomato sauce for warmth and grounding.

  • For Pitta, fresh herbs, avocado, and a little sweet tomato are ideal – they cool and soothe.

  • For Kapha, you can give the topping a fresh lift with spices like ginger, chili, or lemon.

It's not about rules, but about listening – to the body, the mood, and the season. Each time you make it, it becomes a little more your own.
